Vegetarian Chili

This dish is a high-protein family favorite!


INGREDIENTS

1 onion, chopped

1 red pepper, chopped

1 green pepper, chopped

1 cup frozen corn

1–2 zucchinis, chopped coarsely

2 large carrots, sliced

2 cloves garlic, minced

1–2 sweet potatoes, peeled and chopped

1 butternut squash, peeled and chopped

20 oz. can diced tomatoes

15 oz. can black beans

2 tbs. olive oil

2 tsp. cumin

1 tsp. turmeric

1/2 tsp. salt

1/2 tsp. black pepper

2 cups water or vegetable broth


INSTRUCTIONS:

  1. Heat olive oil in a large pot. Add onions and peppers and sauté until softened.

  2. Add water or broth and remaining ingredients. Simmer until vegetables are soft, stirring occasionally.

  3. Serve on its own or topped with sliced avocado, chopped cilantro, chopped red onion, and a wedge of lime.
